Crispy Roasted Okra
Crispy Roasted Okra is prepared by coating trimmed okra in vegetable oil and seasoning with salt and chili flakes, then roasting in a hot oven until crunchy on the outside. The roasting process creates a satisfying crisp texture while preserving the okra's tender interior. The accompanying garlic chili mayonnaise dipping sauce adds a creamy, tangy, and mildly spicy complement, making this a flavorful snack or side dish.
Ingredients
Crispy okra:
- 1 pound okra trimmed
- 1 tablespoon vegetable oil
- salt
- chili flakes
Garlic chilli mayonnaise dipping sauce:
- 4 tablespoons mayonnaise garlic
- 2 tablespoons sweet chilli sauce
Instructions
- Preheat oven to fan 180 degrees C / 200 degrees C / 400 degrees F / gas 6.
- Mix all the ingredients together making sure the okra is well coated.
- Add the okra to a baking tray making sure the pieces are not touching each other.
- Bake for 20-25 minutes (turn them once during baking).
- Whilst the okra is baking mix together the ingredients for the dipping sauce till well combined and set aside.
- Remove the okra from the oven when crunchy and serve warm or cold with the dipping sauce.
Notes
- Coat okra pieces thoroughly with oil to ensure even crisping during roasting.
- Space okra apart on the baking tray to avoid steaming and promote crunchiness.
- Flip okra once during baking to achieve even browning on all sides.
- Adjust chili flakes to control spice level; add gradually if sensitive to heat.
- Prepare dipping sauce in advance and refrigerate until ready to serve.
- Monitor baking time closely to prevent overcooking or burning.
