Ingredients
- 24 oz small potatoes a little over 1 lb
- 3 tbsp olive oil
- 1 garlic finely chopped
- 1 tbsp basil leaves freshly chopped
- ⅓ cup freshly grated Parmesan cheese
- salt and pepper to taste
Instructions
- Preheat the oven to 375°F

MAKE THE DRESSING
- Add the olive oil, garlic, basil, parmesan cheese, salt, and pepper to a bowl, and mix well.
PREPARE THE POTATOES
- Wash the potatoes with cold water. Dry very well with a cloth towel (this is key to their crispiness).
PUTTIG IT ALL TOGETHER
- Add the potatoes in with the dressing and toss to coat each one.
- Transfer to a nonstick baking sheet. Use parchment paper if necessary.
- Make sure to spread out each potato, giving rough space to get crisp around the edges.
- Bake at 375°F for 30 minutes or until fork-tender.
- Enjoy while it's hot.
Notes
- Make it vegan. Skip the cheese or use dairy-free parmesan cheese instead. Don't have fresh basil? Dill or rosemary would also work well.
