  • 1 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp mirin if no mirin, add 1 tbsp rice vinegar and 1/2 tsp sugar
  • 2 tbsp rice wine vinegar unseasoned
  • 2 tbsp sriracha or gochujang or other hot pepper paste
  • 2 tsp sesame oil optional
  • 1 tsp ginger grated fresh
  • 8 oz. soba noodles 1 package; cooked as per package instructions; sliced vegetables
  • 8 oz. cucumber
  • 8 oz. bell peppers

  • 8 oz. avocado
  • 8 oz. mushrooms
