Crock Pot Chicken and Broccoli
This Crock Pot Chicken and Broccoli makes dinnertime a breeze. This healthy slow cooker recipe is loaded with flavor and easy to make.
Ingredients
- 2 pounds chicken breast
- 3 cups broccoli florets
- 2 Tablespoons cornstarch
- 2 Tablespoons water cold
- 1 Tablespoon sesame seeds
- 2 talks green onions diced
For the Sauce:
- 2/3 cup water
- 1/3 cup soy sauce reduced-sodium
- 2 teaspoons brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons cornstarch
- 1 Tablespoon garlic minced
- 1/4 teaspoon ground ginger
- ¼ teaspoon red pepper flakes
- 1 tablespoon sesame oil toasted
Instructions
- Whisk together the sauce ingredients in a medium size mixing bowl.
- Place the chicken breasts in a crock pot and pour the sauce on top.
- Cover and cook on low for 3-4 hours.
- In a small bowl, stir together the cornstarch and cold water. Stir this mixture into the crock pot and add in the broccoli florets.
- Cover and cook on high for 30-40 minutes until the broccoli and chicken are cooked through (internal temperature of 165 degrees Fahrenheit).
- Remove the chicken and roughly shred it into bite size pieces.
- Stir the chicken and broccoli into the sauce in the crock pot.
- Serve over rice topped with the sesame seeds and green onions. Enjoy!
Notes
- Refrigerate any leftovers in an airtight container for up to 5-6 days.
