Crock Pot Chicken and Broccoli

Ingredients

  • 2 pounds chicken breasts
  • 3 cups broccoli florets
  • 2 Tablespoons cornstarch
  • 2 Tablespoons cold water
  • 1 Tablespoon sesame seeds
  • 2 talks green onions diced
For the Sauce:
  • 2/3 cup water
  • 1/3 cup reduced-sodium soy sauce
  • 2 teaspoons brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons cornstarch
  • 1 Tablespoon minced garlic 
  • 1/4 teaspoon ground ginger
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon toasted sesame oil

Instructions

  1. Whisk together the sauce ingredients in a medium size mixing bowl.
  2. Place the chicken breasts in a crock pot and pour the sauce on top.
  3. Cover and cook on low for 3-4 hours.
  4. In a small bowl, stir together the cornstarch and cold water.  Stir this mixture into the crock pot and add in the broccoli florets.
  5. Cover and cook on high for 30-40 minutes until the broccoli and chicken are cooked through (internal temperature of 165 degrees Fahrenheit).
  6. Remove the chicken and roughly shred it into bite size pieces.
  7. Stir the chicken and broccoli into the sauce in the crock pot.
  8. Serve over rice topped with the sesame seeds and green onions.  Enjoy!

Notes

  • Refrigerate any leftovers in an airtight container for up to 5-6 days.
