Crock pot Chicken Quinoa Soup is a hearty, slow-cooked dish combining chicken breast, rinsed quinoa, diced vegetables, and herbs simmered in chicken broth and water. Ingredients
- 2 chicken breast cut into large pieces
- 1 cup quinoa (rinsed)
- 3 carrot peeled and diced
- 2 celery diced, stalks
- 1/2 onion diced
- 4 cups chicken broth
- 2 cups water
- 1 Tablespoon garlic minced
- 2 bay leaf
- 2 tbsp parsley fresh
- 2 teaspoons oregano dried
- 2 teaspoons basil dried
- 1/4 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Place all the ingredients in a crock pot.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Remove the chicken from the crock pot. Shred into large pieces and stir it back into the crock pot.
- Remove the bay leaves from the crock pot.
- Then the soup is ready to serve and enjoy!
