  • 2 chicken breast cut into large pieces
  • 1 cup quinoa (rinsed)
  • 3 carrot peeled and diced
  • 2 celery diced, stalks
  • 1/2 onion diced
  • 4 cups chicken broth
  • 2 cups water
  • 1 Tablespoon garlic minced
  • 2 bay leaf
  • 2 tbsp parsley fresh
  • 2 teaspoons oregano dried
  • 2 teaspoons basil dried
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Place all the ingredients in a crock pot.
  2. Cover and cook on low for 6 hours or on high for 3 hours.
  3. Remove the chicken from the crock pot.  Shred into large pieces and stir it back into the crock pot.
  4. Remove the bay leaves from the crock pot.
  5. Then the soup is ready to serve and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days to maintain freshness.
