These Crock Pot Cinnamon Brown Sugar Carrots are slow-cooked baby carrots coated with melted butter, olive oil, and a light brown sugar and cinnamon glaze. The slow cooker method produces tender carrots infused with warm, sweet, and slightly spiced flavor, making a comforting side dish served warm.
Ingredients
- 2 pounds carrot baby
- 2 tablespoons butter melted, unsalted
- 1 tablespoon olive oil
- 2 tablespoons water
- 1/2 cup light brown sugar packed
- 2 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Add the carrots, melted butter, and olive oil to a 2-4 quart slow cooker. Stir to coat the carrots. Add the water to the slow cooker.
- Cover the slow cooker. Cook on high for 3-4 hours, until tender*.
- Add the brown sugar, cinnamon, and salt to the slow cooker. Stir until well combined.
- Serve warm.
Notes
- Avoid opening the crock pot lid during the first 3 hours to prevent heat and steam loss which extends cooking time.
- The carrots are done when they are tender but not mushy; test with a fork near the end of cooking to check for preferred doneness.
