Ingredients

  • 2 pounds carrot baby
  • 2 tablespoons butter melted, unsalted
  • 1 tablespoon olive oil
  • 2 tablespoons water
  • 1/2 cup light brown sugar packed
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Add the carrots, melted butter, and olive oil to a 2-4 quart slow cooker. Stir to coat the carrots. Add the water to the slow cooker.
  2. Cover the slow cooker. Cook on high for 3-4 hours, until tender*.
  3. Add the brown sugar, cinnamon, and salt to the slow cooker. Stir until well combined.
  4. Serve warm.

Notes

  • Avoid opening the crock pot lid during the first 3 hours to prevent heat and steam loss which extends cooking time.
  • The carrots are done when they are tender but not mushy; test with a fork near the end of cooking to check for preferred doneness.
