Ingredients

  • 2 pounds baby carrots
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon olive oil
  • 2 tablespoons water
  • 1/2 cup packed light brown sugar
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Add the carrots, melted butter, and olive oil to a 2-4 quart slow cooker. Stir to coat the carrots. Add the water to the slow cooker.
  2. Cover the slow cooker. Cook on high for 3-4 hours, until tender*.
  3. Add the brown sugar, cinnamon, and salt to the slow cooker. Stir until well combined.
  4. Serve warm.

Notes

  • *Try to wait at least 3 hours before removing the lid to check on them. The more you open a crock pot, the more steam and heat you let escape, and the longer it takes to cook.
