Crock Pot Corn on the Cob

Here in the midwest, we eat corn on the cob all summer long when it's fresh and sweet at the local farm stands. It's delicious on the grill or boiled, but I love how tasty and easy it is to just toss it in the crockpot - no need to worry about it drying out thanks to the humid heat of the slow cooker.

Ingredients

  • 4-6 ears corn on the cob
  • ½ cup water
  • 1 tablespoon sugar optional
  • 4 tablespoons butter
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Shuck the corn, removing the silk from the corn. Rinse well.
  2. Pour the water and sugar into the slow cooker and stir to combine. Add the corn to the slow cooker.
  3. Cover and cook on high for 3-4 hours or on low for 6-7 hours.
  4. Remove the corn from the slow cooker and brush with melted butter or roll through softened butter to liberally butter the corn. Season with salt and pepper, to taste.

Notes

  • If you’re using a good, fresh sweet corn from a local farm you can skip the sugar in the water. Corn on the cob from the grocery store tends to be less sweet and fresh tasting and the sugar can enhance the flavor a bit. It is optional, if you choose to skip it.
  • You can add as many ears of corn as will fit in your slow cooker. You can also break the corn cobs in half for more smaller servings of corn on the cob and this is what we usually do.
