Ingredients

  • 2 lbs pork tenderloin
  • 1 cup orange juice
  • 2 lime juiced
  • 1 cup cilantro chopped
  • 1/3 cup mint chopped
  • 1 tbsp garlic minced
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp cumin
  • 1 tbsp corn starch
  • 1/4 cup water

Instructions

  1. In a small bowl, combine the orange juice, lime juice, minced garlic, oregano, salt, pepper, cumin, corn starch, cilantro, mint and water.
  2. Add the pork tenderloin to the crock pot.
  3. Pour the sauce over the top of the crock pot.
  4. Cover and cook on low for 4-6 hours or on high for 3-4 hours.
  5. When finished place the pork on a baking sheet lined with foil.
  6. Spoon the extra sauce on top of the pork tenderloin.
  7. Broil for 5 minutes on each side or until the pork is browned slightly.
  8. Let the pork rest for 5 minutes and then it's ready to slice, serve and enjoy!

Notes

  • Leftover pork should be refrigerated in an airtight container and consumed within five days.
  • For baking, cover pork with foil and bake at 400°F for 25-30 minutes until internal temperature reaches 145°F, then uncover and broil briefly for browning.
  • Before grilling, pat pork dry, shake off excess marinade, and cook over medium-high heat, turning every few minutes until reaching 140°F internally; resting will bring it to 145°F.
  • Letting the pork rest after cooking is crucial for juiciness and tenderness.
