Crock Pot Cuban Mojo Pork Tenderloin
This Crock Pot Cuban Mojo Pork Tenderloin is prepared by slow-cooking pork in a citrus and herb marinade featuring orange juice, lime juice, cilantro, mint, garlic, and spices. After cooking, the pork is broiled briefly for a slightly browned finish, enhancing flavor and texture. The result is a tender, flavorful pork suitable for slicing and serving.
Ingredients
- 2 lbs pork tenderloin
- 1 cup orange juice
- 2 lime juiced
- 1 cup cilantro chopped
- 1/3 cup mint chopped
- 1 tbsp garlic minced
- 1 tsp oregano
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp cumin
- 1 tbsp corn starch
- 1/4 cup water
Instructions
- In a small bowl, combine the orange juice, lime juice, minced garlic, oregano, salt, pepper, cumin, corn starch, cilantro, mint and water.
- Add the pork tenderloin to the crock pot.
- Pour the sauce over the top of the crock pot.
- Cover and cook on low for 4-6 hours or on high for 3-4 hours.
- When finished place the pork on a baking sheet lined with foil.
- Spoon the extra sauce on top of the pork tenderloin.
- Broil for 5 minutes on each side or until the pork is browned slightly.
- Let the pork rest for 5 minutes and then it's ready to slice, serve and enjoy!
Notes
- Leftover pork should be refrigerated in an airtight container and consumed within five days.
- For baking, cover pork with foil and bake at 400°F for 25-30 minutes until internal temperature reaches 145°F, then uncover and broil briefly for browning.
- Before grilling, pat pork dry, shake off excess marinade, and cook over medium-high heat, turning every few minutes until reaching 140°F internally; resting will bring it to 145°F.
- Letting the pork rest after cooking is crucial for juiciness and tenderness.
