Crock Pot Garlic Mashed Potatoes

These Make-Ahead Crockpot Mashed Potatoes are a classic side dish made easier in the slow cooker. They're light, creamy, buttery, and so creamy thanks to the addition of sour cream. Just a few minutes of prep needed!

Ingredients

  • 5 pounds potatoes
  • 6 cloves garlic
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1/2 cup butter (1 stick)
  • 1.5 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon oregano
  • 1/2 cup milk add to desired consistency
Garnish
  • chopped fresh parsley

Instructions

  1. Wash the potatoes and add with skin to a large crock pot. Add garlic cloves (whole) and chicken broth.
  2. Cook on high for 3-4 hours, or low for 4-5 hours, or until fork tender.
  3. Add sour cream, butter, salt, pepper and oregano. Mash with a potato masher, mixing in the butter, sour cream, and seasonings as you go.
  4. Once combined, stir in milk until the mashed potatoes come to the desired consistency. Season with additional salt and pepper to taste.
