These Make-Ahead Crockpot Mashed Potatoes are a classic side dish made easier in the slow cooker. They're light, creamy, buttery, and so creamy thanks to the addition of sour cream. Just a few minutes of prep needed!

Ingredients
- 5 pounds potatoes
- 6 cloves garlic
- 1 cup chicken broth
- 1 cup sour cream
- 1/2 cup butter (1 stick)
- 1.5 teaspoons salt
- 1 teaspoon ground black pepper
- 1 teaspoon oregano
- 1/2 cup milk add to desired consistency

- chopped fresh parsley

Instructions
- Wash the potatoes and add with skin to a large crock pot. Add garlic cloves (whole) and chicken broth.
- Cook on high for 3-4 hours, or low for 4-5 hours, or until fork tender.
- Add sour cream, butter, salt, pepper and oregano. Mash with a potato masher, mixing in the butter, sour cream, and seasonings as you go.
- Once combined, stir in milk until the mashed potatoes come to the desired consistency. Season with additional salt and pepper to taste.
