Crock Pot Honey Garlic Chicken

This simple honey garlic sauce is full of flavor that soaks into the chicken as it cooks. Serve over rice with some steamed veggies for a complete meal.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1/2 cup ketchup
  • 1/2 cup reduced sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon water
  • 2 teaspoons cornstarch

Instructions

  1. Add the chicken to a 5 quart slow cooker.
  2. Add the ketchup, soy sauce, honey, garlic, and red pepper flakes to a small bowl and whisk well to combine.
  3. Pour the sauce over the chicken and stir to coat.
  4. Cover the slow cooker and cook on low for 3 1/2 hours or until the meat is cooked through and easily shreds.
  5. Remove the chicken from the slow cooker and shred the meat with a fork. 
  6. Stir together the water and cornstarch and whisk into the sauce. Set slow cooker to high and return the chicken to the sauce. 
  7. Continue cooking for 30 minutes to thicken the sauce slightly.

Notes

  • This dish will turn out too salty if you use regular soy sauce. Reduced sodium soy sauce is required. 
  • Adjust the amount of red pepper flakes to taste.
