Ingredients

  • 2 cups russet potato peeled, chopped into 1 inch cubes
  • 1 cup carrot sliced
  • 1 cup celery sliced
  • 1 cup chopped yellow onion
  • 1 cup zucchini sliced
  • 1 cup green beans frozen, cut
  • 1 cup corn kernels frozen
  • 4 cups vegetable broth
  • 1 (15 oz.) diced tomato petite, canned
  • 1 (15 oz.) tomato sauce canned
  • 1 tablespoon Italian seasoning dried
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper ground
  • 2 bay leaves dried
  • 1 (15 oz.) White beans canned, drained and rinsed; includes cannellini, navy, northern beans
  • 1 (15 oz.) red kidney beans canned, drained and rinsed
  • 2 cups baby spinach loosely-packed, roughly-chopped leaves
  • Parmesan Cheese grated, for serving

Instructions

  1. In a large 6 quart slow cooker, add the potatoes, carrots, celery, onion, zucchini, green beans, broth, diced tomatoes with their juices, tomato sauce, Italian seasoning, sugar, salt, garlic powder, pepper, and bay leaves. Stir until well combined.
  2. Add the drained and rinsed white and kidney beans. Gently stir.
  3. Cover and cook on low for 6 to 8 hours or on high for 4 hours.
  4. Remove the bay leaves. Add the chopped spinach leaves. Stir.
  5. Cover and cook for an additional 15 minutes, until the spinach is soft.
  6. Serve hot topped with Parmesan cheese.
