Crock Pot Rotisserie Chicken

This easy recipe uses onion, spices, and oil to recreate the tenderness and flavors of rotisserie chicken by cooking a whole chicken in the Crock Pot. It’s a simple, set it and forget it recipe that can have a juicy, delicious chicken on the table in 4 hours.

Ingredients

  • 4 pound whole chicken
  • 2 teaspoons salt
  • 1 teaspoons paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1-2 onions quartered
  • 1 tbsp olive oil

Instructions

  1. Peel and quarter the onions and place in the bottom of the crock pot.
  2. Mix the salt, paprika, onion powder, thyme, pepper, and garlic powder together.
  3. Remove the chicken from its packaging and discard the neck and/or gizzards. Rub the outside of the chicken all over with the olive oil. Sprinkle the seasoning all over with the seasoning and rub it in.
  4. Place the chicken in the slow cooker on top of the onions and cover. Cook on low for 4 hours, or until the chicken reaches an internal temperature of 165˚F.
  5. Optional: To make the skin crisp, preheat the oven to 425˚F. Bake for 15-20 minutes or until the skin is lightly browned and crisp.
