Ingredients

  • 1 1/2 cups chicken broth
  • 3 Tbsp minced garlic 
  • 2 Tbsp Old Bay seasoning
  • 2 Tbsp Cajun Seasoning
  • 1 Tbsp dried parsley
  • 2 tsp sugar
  • 1 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp cayenne pepper (optional)
  • 1 small onion thinly sliced
  • 1 1/2 lb. baby yellow potatoes
  • 6 half ears of frozen corn on the cob
  • 14 oz. precooked smoked or Cajun sausage sliced thick
  • 1 stick unsalted butter cut into 8 pieces
  • 2 lbs. frozen large shrimp (I use peeled and deveined)
  • 3 Tbsp lemon juice
  • Optional for serving: lemon wedges and crusty bread

Instructions

  1. Add the chicken broth to a large slow cooker. Add the garlic, old bay, cajun seasoning, parsley, sugar, salt, pepper, and (optional) cayenne pepper. Whisk to combine.
  2. Add the onion, potatoes, and corn. Stir to coat the vegetables in the sauce and seasoning.
  3. Add the sausage and butter on top of the vegetables.
  4. Cover the crock pot and cook on low for 6-8 hours, or high for 3-4 hours.
  5. Add the shrimp and lemon juice. Stir well. Cover and cook just until the shrimp is cooked through, 15-20 minutes.
