Crock Pot Sweet Potato Casserole

Your favorite holiday side dish made in the crock pot to free up oven space! Mashed sweet potatoes topped with mini marshmallows and pecans.

Ingredients

  • 4 pounds sweet potatoes peeled and diced into ½ inch cubes
  • ¾ cup brown sugar packed
  • ¼ cup unsalted butter melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 ½ cups mini marshmallows
  • 1 cup pecans whole

Instructions

  1. Spray crockpot with cooking spray.
  2. Clean and cut sweet potatoes into 1'' pieces. Add the sweet potatoes to the crock pot.
  3. In a medium bowl, whisk together brown sugar, butter, spices, salt and vanilla until completely combined.
  4. Pour butter mixture over the sweet potatoes and stir to combine.
  5. Cover and cook on low for 7-8 hours or on high for 3-4 hours or until sweet potatoes are tender.
  6. Remove lid and mash sweet potatoes. Then top with mini marshmallows.
  7. Cover with lid and continue cooking for 5-10 minutes until marshmallows are melted.
  8. Sprinkle with pecans and serve immediately.

Notes

  • Want browned marshmallows? If your crock pot has an oven-safe insert, you can place it in the oven at 375°F for five to ten minutes or until the marshmallows are toasted on top.
  • Love creamy mashed potatoes? You can use a hand mixer to cream the sweet potatoes right in the crock pot!
