Ingredients

  • 1/2 yellow onion chopped
  • 1 green bell pepper cored and chopped
  • 1 red bell pepper cored and chopped
  • 1 14-ounce can black beans, drained
  • 1/2 cup quinoa
  • 1 14-ounce can diced tomatoes
  • 1 14-ounce can pumpkin puree
  • 2 Tbsp chili powder
  • 2 tsp pumpkin pie spice
  • 1 Tbsp pure maple syrup
  • 1 tsp sea salt
  • 3 cups vegetable broth

Instructions

  1. Add all ingredients for the chili to your slow cooker and stir well to combine. Secure the lid and Slow cook on high 4 hours (or cook on low for 8 to 10 hours). Stir well and serve with green onion and choice of toppings.
