Crockpot Candied Sweet Potatoes
Can sweet potatoes actually get any sweeter? Absolutely they can!
Ingredients
- 1/3 cup maple syrup
- 3/4 cup brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 1/2 teaspoons vanilla extract
- orange optional, zest from 1
- 4 1/2 pounds sweet potato peeled and cut into 1-inch thick slices
- 1/3 cup butter cubed, unsalted
- pecans optional, toasted, for garnish
Instructions
- Combine maple syrup, brown sugar, cinnamon, nutmeg, vanilla extract, and orange zest (if using) in a small bowl.
- Place a layer of sweet potatoes in the crock-pot, dot with butter, and sprinkle on some of the sugar mixture. Repeat layering until all potatoes and sugar mixture are used.
- Cover and cook on low for 4 to 6 hours or until sweet potatoes are tender and glazed. Stir to evenly coat them with the syrupy mixture.
- Serve the candied sweet potatoes warm. Sprinkle with toasted pecans just before serving.
