Crockpot Candied Sweet Potatoes

Ingredients

  • 1/3 cup maple syrup
  • 3/4 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons vanilla extract
  • orange optional, zest from 1
  • 4 1/2 pounds sweet potato peeled and cut into 1-inch thick slices
  • 1/3 cup butter cubed, unsalted
  • pecans optional, toasted, for garnish

Instructions

  1. Combine maple syrup, brown sugar, cinnamon, nutmeg, vanilla extract, and orange zest (if using) in a small bowl.
  2. Place a layer of sweet potatoes in the crock-pot, dot with butter, and sprinkle on some of the sugar mixture. Repeat layering until all potatoes and sugar mixture are used.
  3. Cover and cook on low for 4 to 6 hours or until sweet potatoes are tender and glazed. Stir to evenly coat them with the syrupy mixture.
  4. Serve the candied sweet potatoes warm. Sprinkle with toasted pecans just before serving.
