Crockpot Cheeseburger Soup
Crockpot Cheeseburger Soup combines ground beef, diced potatoes, carrots, celery, and onion slow-cooked in chicken broth and seasoned with herbs. The soup thickens with a butter-flour roux mixed with milk and sharp cheddar cheese, resulting in a creamy, hearty texture reminiscent of cheeseburgers in soup form.
Ingredients
- 1 lb. ground beef browned and drained
- 4 potato peeled and diced, small
- 2 carrot peeled and diced
- 1 celery peeled and diced, stalks
- 1 onion diced
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 teaspoon basil dried
- 1 teaspoon parsley dried
- 1/2 teaspoon garlic powder
- 3 cups chicken broth low sodium
- 1 lb. cheddar cheese
- 3 tablespoons butter unsalted
- 1/4 cup all-purpose flour
- 2 cups milk or cream
Instructions
- Place potatoes, onions, carrots, celery, dried basil, and parsley in the crockpot.
- Then, add the chicken broth over it. Cover with lid. Cook on LOW for about 7 hours OR on HIGH for about 4, or until potatoes are tender.
- About 1 hour before serving, cook the ground beef in a large skillet over medium-high heat. Drain the grease out of it and add the cooked beef to the pot.
- Next, add butter to a clean skillet and melt it over low heat. When melted, slowly whisk in flour and cook until golden brown and bubbly (about 1 minute).
- Whisk in the milk (or cream), salt, and pepper.
- Pour the mixture into the crockpot and stir to combine everything.
- Add the shredded cheese to the crockpot and gently stir.
- Cover with lid and cook another 30 minutes or until cheese is melted.
- Serve immediately with your favorite toppings, we recommend pickle slices and croutons.
