Crockpot Cheeseburger Soup
Description
This soup starts by layering diced vegetables and dried herbs in a crockpot, covered with chicken broth and slow-cooked until the potatoes are tender. Ground beef is browned separately, drained, and added to the crockpot shortly before serving.
A butter and flour mixture is cooked on the stovetop to form a roux, then milk (or cream) is whisked in along with salt and pepper, creating a thick, smooth base. This mixture is stirred into the crockpot, and shredded cheddar cheese is added, melting into the soup to provide rich flavor and creaminess.
The soup offers comfort with its tender vegetable chunks, savory beef, and cheesy creaminess, blending textures well. It is suitable for serving with crunchy toppings like pickle slices or croutons to contrast the smooth soup.
Ingredients
- 1 lb. ground beef browned and drained
- 4 potato peeled and diced, small
- 2 carrot peeled and diced
- 1 celery peeled and diced, stalks
- 1 onion diced
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 teaspoon basil dried
- 1 teaspoon parsley dried
- 1/2 teaspoon garlic powder
- 3 cups chicken broth low sodium
- 1 lb. cheddar cheese
- 3 tablespoons butter unsalted
- 1/4 cup all-purpose flour
- 2 cups milk or cream
Instructions
- Place potatoes, onions, carrots, celery, dried basil, and parsley in the crockpot.
- Then, add the chicken broth over it. Cover with lid. Cook on LOW for about 7 hours OR on HIGH for about 4, or until potatoes are tender.
- About 1 hour before serving, cook the ground beef in a large skillet over medium-high heat. Drain the grease out of it and add the cooked beef to the pot.
- Next, add butter to a clean skillet and melt it over low heat. When melted, slowly whisk in flour and cook until golden brown and bubbly (about 1 minute).
- Whisk in the milk (or cream), salt, and pepper.
- Pour the mixture into the crockpot and stir to combine everything.
- Add the shredded cheese to the crockpot and gently stir.
- Cover with lid and cook another 30 minutes or until cheese is melted.
- Serve immediately with your favorite toppings, we recommend pickle slices and croutons.
