Crockpot Chicken and Gravy

Ingredients

  • 1 ¼ cups chicken broth
  • 2 .5-ounce cans cream of chicken soup
  • 2 .85-ounce packets chicken gravy mix
  • 1 ½ - 2 pounds boneless skinless chicken breasts about 3-4 breasts
  • 1 teaspoons garlic powder
  • ½ teaspoons onion salt
  • ½ teaspoons black pepper
  • Parsley for Garnish

  1. Make the gravy. In the basin of your crockpot, whisk the broth, cream of chicken soup and gravy mix until smooth and set aside.
  2. Season the chicken. Season both sides of your chicken with garlic powder, onion salt, pepper and add the chicken to the crockpot.
  3. Cook. Cook on low 6 hours or high 3 hours. When the internal temperature of the chicken reaches 165°F, turn the crockpot off.
  4. Shred the chicken. Once cooked, shred the chicken in the crockpot with 2 forks and mix with the surrounding gravy. Its going to look a bit watery, trust the process! It will thicken and mix well once stirred.
  5. Garnish. Garnish with parsley and serve warm. Try it over mashed potatoes!

Notes

  • This dish is just as good served with the chicken breasts served whole or diced into pieces.
  • Start by searing the chicken and then mix together the gravy ingredients in a Dutch oven. Nestle the chicken in the pot and cook on the stove over low heat until the chicken is done or you can cook it in the oven for 1 ½ hours at 350° F.
  • Add some chopped garlic and fresh herbs like thyme and sage or some Italian seasoning to the gravy for depth of flavor.
  • Skip shredding: This dish is just as good served with the chicken breasts served whole or diced into pieces.
