Ingredients

  • 2 boneless skinless chicken breasts
  • (1) 14 oz. can of black beans Rinsed and Drained
  • 1 cup frozen corn
  • 1/2 onion chopped
  • (1) 8 oz. can of diced tomatoes with green chilies
  • 2 cups chicken broth
  • 2 Tablespoons taco seasoning
  • 1 teaspoon garlic salt
  • 8 oz. cream cheese Diced into small pieces

Instructions

  1. Place all the ingredients except for the cream cheese in a 6 quart crock pot.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. Shred the chicken and stir it into the crock pot.
  4. Stir in the cream cheese, cover and cook on low for 1 hour or on high for 30 minutes to melt the cream cheese.
  5. Top with your favorite taco toppings and enjoy!

Notes

  • Refrigerate the leftovers in an air tight container for 5-7 days.
