Crockpot Funeral Potatoes

Ingredients

  • 32 ounces diced frozen hash browns
  • 1 can cream of chicken soup 10.5 ounce
  • 1 cup sour cream
  • 1/2 onion finely diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese divided

Instructions

  1. Spray a 6 quart crock pot with a non-stick cooking spray.
  2. In a large mixing bowl, stir together the hash browns, cream of chicken soup, sour cream onion, salt, pepper and 1 cup of the shredded cheese.
  3. Pour the potato mixture into the crock pot and spread it out as evenly as possible.
  4. Cover and cook on high for 3-4 hours or on low for 5-6 hours (mix the ingredients halfway through the cook time) until the potatoes are tender.
  5. Top with the remaining cheddar cheese.  Cover and cook on low for 10-15 minutes until the cheese is melted.
  6. Serve warm and enjoy!

Notes

  • Refrigerate the leftovers in an airtight container for up to 1 week
