Crockpot Lava Cake

For the cake
- 15.25 ounces (432g) Chocolate Cake Mix one box
- 1 1/4 cup (296ml) water
- 1/2 cup (118ml) oil
- 3 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon instant coffee granules
For the topping
- 3.4 ounces (111g) instant chocolate pudding and pie filling mix one box
- 2 cups (250ml) milk
- 12 ounces (240g) milk or semi-sweet chocolate chips one bag
Instructions
- Spray a crockpot with cooking spray.
- In a bowl, use a hand mixer or whisk to mix together cake mix, water, oil, eggs, vanilla and coffee granules until well combined.
- Add cake batter into crockpot.
- In another bowl, whisk together milk and pudding mix until combined. Let stand for a few minutes before pouring it over the cake batter. Make sure to NOT mix in with cake batter.
- Sprinkle the bag of chocolate chips on top of the pudding layer, and do not mix in.
- Cover and cook on High for 2.75 - 3 hours, or until the top of the cake is puffed up and set. Timing will vary depending on the size and make of your slow cooker.
- Once baked, remove cake and serve with a scoop of ice cream or whipped cream.

Notes
- The coffee granules enhance the chocolate flavor but are not a must-have ingredient
- Make sure that you don't mix the layers before baking.
- Watch the edges of the cake as it cooks, you want to make sure you don’t overbake the cake.
- If your slow cooker tends to burn desserts, try lining the insert with parchment paper and then spray with cooking spray.
- I used Betty Crocker chocolate cake mix in this recipe.
- The cooking time for your cake may vary depending on the size, make and model of your slow cooker.
