Ingredients

  • 5 pounds Russet potatoes cleaned and cut into cubes
  • 3 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 oz cream cheese, room temperature
  • 1 tick ½ cup unsalted butter
  • ½ cup half-and-half or milk

Instructions

    Cup of Yum
  1. Clean and cut potatoes, add to crockpot
  2. Pour chicken broth over potatoes
  3. Cook on low for 6-7 hours or high for 3-4 hours, or until potatoes are fork tender
  4. Remove from crockpot and drain, reserve chicken broth
  5. Return to pot and mash with a potato masher
  6. Add seasonings, cream cheese and butter
  7. Mix until completely combined
  8. Gradually add half-and-half and stir until desired consistency, add back in reserved chicken broth as needed
  9. Serve immediately
  10. Store leftovers in refrigerator
