Ingredients
- 2 tablespoons ghee or butter
- 8 chicken thighs bone-in and skin-on
- 6 tablespoons Dijon mustard
- 2 lb red potatoes small, cubed
- 2 tablespoons olive oil
- 4 cloves garlic pushed through a garlic press
- ¼ teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 2 tablespoons Parmesan Cheese shredded, optional
- 2 tablespoons Italian parsley finely chopped
Instructions
- In a medium bowl mix chicken thighs, ½ salt, and mustard.
- Heat ghee or butter in a large skillet over medium heat. Add chicken skin side down and fry for 5 to 7 minutes until the skin is brown. Flip it and cook for 3 more minutes.
- Arrange potatoes on the bottom of a slow cooker. Add olive oil, garlic, black pepper, the remaining ½ teaspoon salt, dried thyme and mix to combine.
- Place chicken skin side-up on top of potatoes. Cover with a lid and cook for 4 hours on high or 7 hours on low.
- Once ready, sprinkle with optional Parmesan cheese and parsley.
