Crockpot Spinach Artichoke Dip

This Crockpot Spinach Artichoke Dip is a favorite appetizer and people go crazy for it! It’s full of creamy, cheesy and veggie goodness and is perfect for parties.

Ingredients

  • 10 ounces fresh spinach
  • 14 ounces artichoke hearts
  • 1 cup pepper jack cheese shredded
  • 1/2 cup Parmesan Cheese shredded
  • Juice of 1/2 a lemon
  • 2 cloves garlic minced
  • 1 cup Greek yogurt
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 ounces cream cheese room temperature

Instructions

  1. Roughly chop the fresh spinach. Drained the artichokes and press with a paper towel to remove excess water. Place all the ingredients in the crock pot except the cream cheese. Stir together until everything is combined.
  2. Cut the cream cheese into cubes and place on top.
  3. Cook for 1 hour on high. Stir and cook for another hour. Serve with your favorite dippers.

Notes

  • This Crock Pot Spinach Artichoke Dip recipe isn't just for dipping! Spread it on chicken breasts before you bake them, or use it as a pasta sauce!
  • Optional additions include half a white onion finely diced, red pepper flakes, and a dash of cayenne pepper.
  • I like to use fresh spinach because I think it tastes better, but you can also use frozen. If you use frozen, then make sure to thaw it completely and squeeze out any extra water with a paper towel.
