Crockpot Sweet Potatoes

Crockpot sweet potatoes are an incredibly easy side or main dish.

Ingredients

  • 5 large sweet potatoes unpeeled
  • butter optional and to taste (dairy or vegan)

Instructions

  1. Clean and scrub the sweet potatoes but don't dry them. The moisture will help cook them.
  2. Add sweet potatoes in a single layer in the crockpot. If needed, stack one more layer on top.
  3. Cover and cook on the high setting for 3 1/2-4 hours, or low heat for 6-7 hours until they are fork tender.
  4. Remove the lid, season to taste, then serve and enjoy!

Notes

  • Cook the slow cooker sweet potatoes potatoes in a single layer. If you need to stack another layer on top. But don't do more than two layers. You don't need to poke holes in the veggies. They will cook as they are without the need for steam release. If possible try and cook similar sized potatoes together they cook evenly and at the same rate. Avoid opening the slow cooker too much during cooking, as this will bring down the temperature and result in a longer cook time.
