Ingredients

  • 2 pounds ground beef (browned and drained)
  • ½ medium onion (diced)
  • 3 potatoes (peeled and diced into 1 inch pieces)
  • 16 oz frozen mixed vegetables
  • 3 cans diced tomatoes (14.5 oz cans)
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Place all the ingredients in a 6 quart crock pot.
  2. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  3. Serve hot and enjoy!

Notes

  • This soup can also be made on the stovetop!  Add all the ingredients to a large stock pot and simmer for 30-40 minutes until the soup is cooked through.
