Crockpot White Chicken Chili Recipe

My comforting and easy-to-make crockpot white chicken chili is packed with shredded chicken, white beans, corn, and plenty of Mexican flavor.

Ingredients

  • 3 boneless, skinless chicken breasts (about 1½ pounds)
  • 45 ounces canned white beans drained, rinsed, and divided (3 cans)
  • 32 ounces low-sodium chicken broth (4 cups)
  • 1 yellow onion chopped
  • 1 Jalapeno pepper chopped
  • 2 shallots chopped
  • ¼ cup chopped fresh cilantro
  • ½ teaspoon ground cayenne pepper
  • ¼ teaspoon dried oregano
  • 2 teaspoons ground cumin
  • 15 ounces canned corn (1 can)

Instructions

  1. Place chicken breasts in the slow cooker and top with 2 cans of beans (reserve 1 for later) and remaining chili ingredients.
  2. Stir to combine and cook on low for 6-8 hours.
  3. When finished cooking, remove chicken breasts and shred, then add back to the chili.
  4. Remove 1 cup of broth from the chili and place in a blender with the remaining can of beans.
  5. Add shredded chicken and bean slurry to chili and cook on high 15 minutes.
  6. Serve with your favorite toppings.

  • Storage: Store white chicken chili in an airtight container in the refrigerator for 3 days, or freeze for 3 months.
