Ingredients
- 6 Croissant halved lengthways
- 3 eggs
- 200 ml whole milk
- 2 tablespoon light brown sugar
- 1 teaspoon vanilla extract
- 0.5 teaspoon ground cinnamon
- 3 tablespoon maple syrup
Instructions
- Preheat your oven to 180°C/160°C(fan)/350°F/Gas 4.
- Put the bottom parts of 6 Croissant into a baking dish.
- Mix together 3 Eggs, 200 ml Whole milk, 2 tablespoon Light brown sugar, 1 teaspoon Vanilla extract, 0.5 teaspoon Ground cinnamon and 3 tablespoon Maple syrup.
- Pour half the mixture on the croissants in the baking dish. Put the top half of the croissants on top and pour over the rest of the mixture.
- Put the baking dish into the oven and bake for 35-40 minutes.
- Serve with berries, yogurt, jam, flaked almonds and fresh mint (all optional).

Notes
- Make a grown-up version of this by adding a splash of Baileys or rum to the milk mixture.
- You could serve this for dessert instead of breakfast/brunch and put some vanilla ice cream on top.
- Take these to the next level and add a drizzle of orange icing on top.
- Add some crunch with a sprinkle of crushed pecans.
- Using slightly stale croissants works best for this recipe.
