Ingredients

Rice:
  • 1 cup sushi rice (or short-grain rice)
  • 1 ¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
Protein (choose one):
  • 8 ounces cooked shrimp, peeled and deveined
  • 8 ounces cooked salmon, flaked
  • 8 ounces cooked chicken, shredded
  • 8 ounces cooked tuna, diced
  • Tofu, cubed and pan-fried or baked (vegetarian option)
Toppings (choose a variety):
  • avocado, sliced or diced
  • Cucumber, julienned or diced
  • carrots shredded or julienned
  • Mango sliced or diced
  • edamame shelled
  • seaweed salad wakame
  • imitation crab meat kani kama
  • spicy mayo mayonnaise, sriracha, a touch of sesame oil
  • eel sauce unagi sauce
  • sesame seeds
  • Furikake Seasoning
Crunch:
  • Tempura flakes (tenkasu) or crushed crispy onions

Instructions

  1. Cook sushi rice: Rinse the sushi rice in a fine-mesh sieve until the water runs clear. Combine the rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
  2. Season rice: While the rice is still hot, gently stir in the rice vinegar, sugar, and salt. Let the rice cool to room temperature.
  3. Prepare protein (if needed): If cooking your protein, do so according to your preferred method.
  4. Assemble bowls: Divide the seasoned rice between two bowls. Arrange your chosen protein and toppings attractively over the rice.
  5. Add crunch and sauces: Sprinkle generously with tempura flakes (or crispy onions). Drizzle with spicy mayo and eel sauce (if desired).
  6. Garnish and serve: Sprinkle with sesame seeds and furikake seasoning. Serve immediately.

Notes

  • Rice: Sushi rice is essential for the best flavor and texture. If you can't find it, short-grain rice is a good substitute.
  • Protein: Choose your favorite protein or a combination. You can also use leftover cooked protein.
  • Toppings: Get creative with your toppings! The possibilities are endless.
  • Crunch: Tempura flakes (tenkasu) are the traditional crunch for a crunch roll. Crushed crispy onions are a good substitute.
