Crustless Quiche
This crustless quiche combines diced ham, steamed broccoli, and Swiss cheese in a creamy custard made from eggs, milk, half and half, and seasonings like nutmeg and black pepper. Baked until set, the dish presents a soft, dense texture with savory notes from the ham and delicate nuttiness from the cheese. Its lack of crust makes it lighter while retaining the familiar quiche flavor, suitable for breakfast, brunch, or light dinner servings.
Ingredients
- cooking spray
- 1 3/4 cups ham 9 oz total, diced
- 1 cup broccoli fresh or frozen, steamed, chopped
- 1 cup cheese I used Swiss, but you can use cheddar, gouda, feta, etc, fresh grated
- 2/3 cup milk 2%
- 1/4 cup half and half cream
- 5 large egg
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper ground
- pinch nutmeg
Instructions
- Preheat the to 350F degrees. Spray a pie dish or quiche with oil.
- Evenly spread the broccoli in the dish and top it evenly with the ham.
- Make the custard mixture by whisking together the milk, half and half, eggs, salt, black pepper, and the nutmeg.
- Pour the custard into the dish and top with Swiss Cheese.
- Bake 35 to 40 minutes, until the center is set.
- Cut the quiche into 6 pieces and serve.
Notes
- Ham can be swapped with bacon, sausage, or a vegan sausage alternative for variation.
- Cheese options are flexible; Swiss, cheddar, mozzarella, Gruyere, or feta work well in this quiche.
- Replacing half and half with more milk results in a less creamy, spongier texture.
- To make individual servings, use ramekins instead of a single pie dish and adjust baking time accordingly.
- If using a crust, reduce broccoli amount and use a deeper pie dish as needed to accommodate the crust.
