Crustless Quiche
Description
Crustless Quiche blends diced ham and steamed broccoli evenly spread in a pie dish, topped with a custard made from eggs, milk, half and half, and seasonings including kosher salt, black pepper, and a pinch of nutmeg. Swiss cheese crowns the top before baking at 350°F until the center is set, producing a sliceable, tender dish with well-distributed ingredients.
The texture is creamy and custardy without the typical pastry crust, which gives it a moist, rich mouthfeel. The ham adds savory depth, while the broccoli contributes mild vegetable freshness and slight crunch. Swiss cheese melts into a smooth, mildly nutty topping.
This quiche is suited for various meals and pairs well with fresh greens or fruit. Variations include substituting the ham with bacon, sausage, or plant-based alternatives, adjusting cheese choices for different flavors, or using individual ramekins for portioned servings. The recipe also allows for a traditional crust if preferred, with adjustments to filling quantity and baking vessel.
Choosing to replace half and half with extra milk will result in a less creamy, more spongy texture. The recipe demonstrates flexibility with ingredients while maintaining a cohesive, comforting dish.
Ingredients
- cooking spray
- 1 3/4 cups ham 9 oz total, diced
- 1 cup broccoli fresh or frozen, steamed, chopped
- 1 cup cheese I used Swiss, but you can use cheddar, gouda, feta, etc, fresh grated
- 2/3 cup milk 2%
- 1/4 cup half and half cream
- 5 large egg
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper ground
- pinch nutmeg
Instructions
- Preheat the to 350F degrees. Spray a pie dish or quiche with oil.
- Evenly spread the broccoli in the dish and top it evenly with the ham.
- Make the custard mixture by whisking together the milk, half and half, eggs, salt, black pepper, and the nutmeg.
- Pour the custard into the dish and top with Swiss Cheese.
- Bake 35 to 40 minutes, until the center is set.
- Cut the quiche into 6 pieces and serve.
Notes
- Ham can be swapped with bacon, sausage, or a vegan sausage alternative for variation.
- Cheese options are flexible; Swiss, cheddar, mozzarella, Gruyere, or feta work well in this quiche.
- Replacing half and half with more milk results in a less creamy, spongier texture.
- To make individual servings, use ramekins instead of a single pie dish and adjust baking time accordingly.
- If using a crust, reduce broccoli amount and use a deeper pie dish as needed to accommodate the crust.
