Ingredients
- 2 Tablespoons olive oil
- 1/2 onion
- 1/2 red bell pepper
- 1/3 green bell pepper
- 1/2 10-ounce package fresh baby spinach
- 2 teaspoons minced garlic
- 6 eggs
- 1/4 cup milk
- salt and pepper to taste
- 1 Tablespoon Greek seasoning
- 2 cups shredded cheddar cheese
- 1/2 cup crumbled Feta cheese
Instructions
- Preheat oven to 350 degrees F.
- Spray 9" pie pan with cooking spray.
- In a large skillet over medium heat, add olive oil. When the oil is hot, add the onions, red and green bell peppers. Cook until the vegetables are soft.
- Add spinach. It will look like a LOT. Don't worry, it cooks down in about 2 minutes.
- Add minced garlic and stir for about 1 minute.
- In a large bowl, whisk together the eggs and milk. Add salt and pepper to taste.
- Add in the Greek Seasoning.
- Stir in Cheddar cheese and crumbled feta.
- Add in the spinach and other vegetables in the egg mixture. Stir until combined.
- Pour the egg mixture into a prepared 9" pie pan.
- Bake in a preheated oven for about 30 minutes.
- Let rest for about 10 minutes.
