Cucumber Agua Fresca Recipe

Cucumber Agua Fresca is a refreshing, non-alcoholic beverage made by blending cucumber chunks, fresh lime juice, sugar, mint, ginger, and water. The smooth puree is strained to remove pulp, resulting in a crisp, lightly sweetened drink with bright citrus and cooling mint notes. Ingredients

  • 2 English cucumber cut into chunks, large
  • 1 cup lime juice 8-10 limes, freshly squeezed
  • 2/3 cup granulated sugar
  • 10-15 mint leaf fresh
  • 1 piece ginger 1-2 inches, fresh
  • 4 cups water divided

Instructions

  1. Prepare all the ingredients and place in a blender jar. Add 2 cups water. Cover and blend until the mixture is very smooth.
  2. Place a sieve over a pitcher. Pour the agua fresca through the strainer to remove the pulp. Add the remaining 2 cups water. Cover and chill until ready to serve.

Notes

  • This refreshing cucumber agua fresca is a non-alcoholic drink but can be enhanced with vodka or tequila if desired.
