Cucumber Agua Fresca Recipe
Description
This agua fresca starts by blending English cucumbers, fresh lime juice extracted from about 8 to 10 limes, granulated sugar, fresh mint leaves, a small piece of fresh ginger, and half the water. After blending to a smooth consistency, the mixture is strained through a sieve to remove solids. The remaining water is stirred in, diluting the drink to an ideal refreshing taste.
The resulting beverage is cool and subtly sweet with balanced tartness from lime, the vegetal freshness of cucumber, a hint of spice from ginger, and aromatic mint. It’s served chilled, making it suitable as a cooling mocktail alternative.
The recipe notes mention it can be spiked with vodka or tequila for an adult variation, but as presented it is a gentle, fresh drink appropriate for all ages.
Ingredients
- 2 English cucumber cut into chunks, large
- 1 cup lime juice 8-10 limes, freshly squeezed
- 2/3 cup granulated sugar
- 10-15 mint leaf fresh
- 1 piece ginger 1-2 inches, fresh
- 4 cups water divided
Instructions
- Prepare all the ingredients and place in a blender jar. Add 2 cups water. Cover and blend until the mixture is very smooth.
- Place a sieve over a pitcher. Pour the agua fresca through the strainer to remove the pulp. Add the remaining 2 cups water. Cover and chill until ready to serve.
Notes
- This refreshing cucumber agua fresca is a non-alcoholic drink but can be enhanced with vodka or tequila if desired.
