Cucumber Bites

Prepared with fresh cucumbers topped with a zesty cream cheese mixture and cherry tomatoes, these Cucumber Bites are light, tasty, and perfect for serving as an appetizer. Make them in minutes, and get ready to serve!

Ingredients

  • 14 cherry tomatoes
  • 2 cucumbers
  • 4 ounces cream cheese softened
  • 2 tablespoons mayonnaise
  • 2 tablespoons ranch dressing
  • 1 tablespoon fresh dill chopped
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon garlic salt
  • fresh ground pepper garnish

Instructions

  1. Wash, peel and slice the cucumbers into ½ inch slices discarding the ends.
  2. With a small measuring spoon, remove a little of the center of each cucumber slice.
  3. In a medium mixing bowl, mix together the softened cream, mayo, ranch dressing, italian seasoning and garlic salt. Mix well until smooth.
  4. Add in the fresh dill and mix until combined.
  5. Add filling into a piping bag with a star tip. Pipe about 1 tablespoon of filling onto each cucumber piece.
  6. Slice each cherry tomato into half.
  7. Place 1 half on top of the filling of each piece of cucumber.
  8. Sprinkle fresh ground pepper on top and serve.
