Cucumber, Chickpea, and Pita Salad

This fresh and easy cucumber salad is perfect for potlucks, picnics, and barbecues.

Ingredients

For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 2 tablespoons lemon juice fresh
  • 1 clove garlic minced
  • black pepper to taste
  • salt to taste
For the Salad:
  • 2 cucumber peeled, and cut into 1/2-inch pieces, medium
  • 1 chickpeas 15 oz can, rinsed and drained
  • 2 green onions chopped
  • 2 tablespoons dill finely chopped, fresh
  • 1/2 cup feta cheese crumbled
  • 1 cup Pita chips broken into bite size pieces
  • black pepper to taste
  • salt to taste

Instructions

  1. In a small bowl, whisk together olive oil, vinegar, lemon juice, garlic, salt, and pepper. Set aside.
  2. In a medium salad bowl, cucumber, chickpeas, green onion, dill, feta cheese, and pita chips. Drizzle dressing over salad and gently toss. Season with salt and pepper, to taste. Serve.
  3. Note-if cucumber seeds bug you, you can remove the seeds or buy seedless cucumbers.
