Cucumber Dill Salad

Ingredients

  • 3 cucumbers sliced thin
  • 1 small white onion sliced thin
  • ⅓ cup apple cider vinegar
  • 3 Tablespoons granulated sugar
  • 1 Tablespoon fresh parsley chopped
  • 1 Tablespoon fresh dill chopped

Instructions

  1. Thinly slice cucumbers and onion using a mandoline, the slice blade on a food processor, or a knife. You could even use a spiralizer! Place in a medium sized bowl.
  2. In a small glass, whisk together the vinegar, sugar, fresh parsley and fresh dill. Pour over cucumber and dill, toss, and enjoy.
  3. If serving this salad later in the day, store the dressing in a glass in the refrigerator until ready to serve. Right before serving, drizzle over salad and enjoy!

Notes

  • Slicing cucumbers: If using a knife to cut your cukes, make sure it is nice and sharp for best results. I like this salad best when the cucumbers are so thin they are almost translucent. This is also a great time to put the slice blade on your mandolin to good use.
  • Make ahead: If you’re making the salad in advance, store the dressing separately from the veggies and herbs. Then, when you’re ready to serve drizzle the vinegar dressing over the salad and toss!
