Ingredients
- 3 cucumbers sliced thin
- 1 small white onion sliced thin
- ⅓ cup apple cider vinegar
- 3 Tablespoons granulated sugar
- 1 Tablespoon fresh parsley chopped
- 1 Tablespoon fresh dill chopped
Instructions
- Thinly slice cucumbers and onion using a mandoline, the slice blade on a food processor, or a knife. You could even use a spiralizer! Place in a medium sized bowl.
- In a small glass, whisk together the vinegar, sugar, fresh parsley and fresh dill. Pour over cucumber and dill, toss, and enjoy.
- If serving this salad later in the day, store the dressing in a glass in the refrigerator until ready to serve. Right before serving, drizzle over salad and enjoy!

Notes
- Slicing cucumbers: If using a knife to cut your cukes, make sure it is nice and sharp for best results. I like this salad best when the cucumbers are so thin they are almost translucent. This is also a great time to put the slice blade on your mandolin to good use.
- Make ahead: If you’re making the salad in advance, store the dressing separately from the veggies and herbs. Then, when you’re ready to serve drizzle the vinegar dressing over the salad and toss!
