Cucumber Feta Bites

hese Cucumber Feta Bites are a wonderful, fresh appetizer to make and serve at any get together. They are so easy to make and healthy to eat.

Ingredients

  • 1 English cucumber
  • 1 tablespoon of Feta cheese
  • 3 tablespoons of plain fat free Greek Yogurt
  • 2 teaspoons of light cream cheese
  • ¼ cup sliced almond optional

Instructions

  1. In a small bowl, mix the feta cheese, Greek yogurt and cream cheese together well.
  2. Slice the cucumber in half the long way.
  3. Scoop the pulp out of center of each side of the cucumber.
  4. Split the feta mixture to each cucumber half and spread it on the cucumber halves.
  5. Top with sliced almonds.
  6. Slice the cucumber into about 1 inch pieces.
  7. Optional: Add the cucumber pulp to the feta mixture. I did this. It is a little more liquidy but so yummy.
  8. ENJOY!!
