Cucumber Juice

You can make cucumber juice with just cucumbers and water and no special juicer. I share the easy steps to make the recipe and its amazing health benefits!

Ingredients

  • 6 cups water
  • 2 English cucumbers
  • 1 lemon juice and zest
  • 2 tablespoons fresh mint

Instructions

    Cup of Yum
  1. Slice off the ends of the cucumbers and peel. Chop into a few larger pieces.
  2. Place the cucumbers, water, lemon zest, lemon juice and mint in a food processor or in a blender. Blend the ingredients for 2-3 minutes until smooth.
  3. Set a strainer over a larger bowl and pour the cucumber juice into the strainer. Use a spatula to move the juice through the strainer until no more juice strains out. Discard the solids.
  4. Enjoy the cucumber juice immediately, or store in fridge for up to 24 hours.

Notes

  • Storage: Store any leftovers in an airtight mason jar. It will stay fresh for up to 24 hours. But ideally, it's best to consume immediately after blending.
  • Equipment: I use my Vitamix blender to make my smoothies. It has a "smoothie" button so it does all the work for me until the ingredients are well blended.
