Cucumber Punch
This refreshing Cucumber Punch combines thinly sliced cucumber with lemon-lime soda and limeade concentrate for a cool, citrusy beverage. Crushed ice keeps it chilled, and optional vodka can be added to create a light cocktail. The cucumber slices infuse a subtle freshness that complements the sweet and tangy components, making it suitable for summer gatherings or casual entertaining.
Ingredients
- 1 English cucumber
- 2 liters lemon-lime soda
- 12 ounces limeade concentrate partially thawed
- ice crushed
- vodka (optional - see note)
Instructions
- Take the can of frozen limeade concentrate out of the freezer and let it thaw on the counter while you prepare the other ingredients.
- Cut the ends off the cucumber and then cut into very thin slices. (A mandolin slicer would be great for this.)
- Add the cucumber slices to the bottom of a 2.5-quart pitcher, punch bowl, or beverage dispenser. Pour some crushed ice over the cucumbers.
- Pour the limeade onto the ice, and then pour in the lemon-lime soda. Chill for 1 hour in the fridge.
- Stir the punch before pouring it into glasses. Be sure to add some cucumber slices to each glass.
Notes
- Let the limeade concentrate thaw on the counter before assembling the punch for easier mixing.
- Add 1 1/4 ounces of vodka to each glass for a boozy version, poured before the punch.
- Serve with extra cucumber slices in glasses for garnish and enhanced flavor.
