Cucumber Punch
Description
The Cucumber Punch recipe uses an English cucumber sliced thin, layered with crushed ice, then topped with a mixture of partially thawed limeade concentrate and lemon-lime soda. The ingredients meld in the fridge for an hour, allowing the cucumber flavor to gently infuse the punch while it chills thoroughly. The result is a bubbly, citrus-forward drink balanced by the crispness of cucumber.
The drink’s texture is lively due to the carbonation, with a refreshing, slightly tart taste from the limeade and lemon-lime soda pairing. The cucumber enhances the punch’s freshness but remains subtle, blending well with the citrus notes. Optionally, vodka can be added per serving for an alcoholic twist.
This punch is ideal as a nonalcoholic beverage during warm weather or a light cocktail base at parties. Serving it in glasses with a few cucumber slices adds an attractive touch and reinforces the fresh flavor.
Adding vodka to each glass immediately before pouring the punch allows control over alcohol content and maintains the punch’s refreshing character for all guests.
Ingredients
- 1 English cucumber
- 2 liters lemon-lime soda
- 12 ounces limeade concentrate partially thawed
- ice crushed
- vodka (optional - see note)
Instructions
- Take the can of frozen limeade concentrate out of the freezer and let it thaw on the counter while you prepare the other ingredients.
- Cut the ends off the cucumber and then cut into very thin slices. (A mandolin slicer would be great for this.)
- Add the cucumber slices to the bottom of a 2.5-quart pitcher, punch bowl, or beverage dispenser. Pour some crushed ice over the cucumbers.
- Pour the limeade onto the ice, and then pour in the lemon-lime soda. Chill for 1 hour in the fridge.
- Stir the punch before pouring it into glasses. Be sure to add some cucumber slices to each glass.
Notes
- Let the limeade concentrate thaw on the counter before assembling the punch for easier mixing.
- Add 1 1/4 ounces of vodka to each glass for a boozy version, poured before the punch.
- Serve with extra cucumber slices in glasses for garnish and enhanced flavor.
