    Cup of Yum

  3. Sprinkle with chopped parsley and serve.

Notes

  • Dressing: While Italian dressing is the classic choice for this salad, feel free to substitute it with your favorite dressing. A homemade vinaigrette or a creamy dressing would work well. Just make sure the flavors complement the fresh cucumbers and tangy onions.
  • Add-Ons: You can customize this salad to your liking. You can add cherry tomatoes, olives, or feta cheese for a Mediterranean twist. If you're looking to add more protein, try tossing in some chickpeas or grilled chicken. Just keep in mind that the more ingredients you add, the more dressing you might need.
  • Refrigerating: After enjoying this refreshing dish, you might have some leftovers. Don't worry, you can store your cucumber red onion salad in an airtight container in the fridge. It will stay fresh for up to 2 days.
  • Freezing: Unfortunately, this salad doesn't freeze well due to the high water content in cucumbers. Freezing can change the texture of the cucumbers, making them mushy when thawed.
