Cucumber Salsa Recipe

Crisp and light Cucumber Salsa is delicious with tortilla chips or on top of tacos. It is best when freshly made and chilled.

Ingredients

  • 2 cucumbers peeled, seeded, and chopped
  • 2 tomatoes chopped
  • 1/2 cup green bell pepper chopped
  • 1 Jalapeno pepper seeded and minced
  • 1/2 onion chopped
  • 1 tsp minced garlic 
  • 2 tbsp lime juice
  • 2 tsp cilantro minced
  • 1/4 tsp dill weed dried
  • 1/4 tsp garlic salt (with parsley flakes)

Instructions

    Cup of Yum
  1. Add chopped cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lime juice, cilantro, dill, and garlic salt to a medium bowl. 
  2. Stir to combine. Cover and refrigerate for 1 hour. Serve with tortilla chips.
