Cucumber Salsa

This Cucumber Salsa is easy to make, refreshing, and perfect for eating with crispy tortilla chips or on tacos, enchiladas, and grilled meats.

Ingredients

  • 2 large cucumbers, peeled and diced
  • 2 cups diced Roma tomatoes
  • 1 cup diced red onions
  • ⅔ cup chopped cilantro
  • 2 Jalapeno peppers diced
  • 2 cloves garlic, grated or minced
  • 6 tablespoons lime juice (about 2 large limes)
  • 1 tablespoon olive oil
  • kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Combine the cucumbers, tomatoes, onions, cilantro, jalapeños, garlic, lime juice, olive oil, salt, and black pepper in a large bowl. Toss together to coat, taste, and season with more salt and black pepper as needed.
  2. Cover and refrigerate for 30 minutes to let all the flavors meld together.
  3. Serve with tortilla chips or on tacos, lettuce wraps, salads, fish, or any dish that needs a hint of freshness and brightness.
